Step 1: Gathering your ingredients 

For the simplest but creamy, delicious coffee ice cream, there are only a few easy ingredients that you will need. And you never know, you might already even have them in your kitchen. For this recipe, you will need

  • 1 ½ cups of whole milk 
  • ¾ cup of sugar
  • 1 ½ cups of your favorite whole coffee beans
  • A pinch of salt 
  • 1 ½ cups of heavy cream 
  • 5 egg yolks 
  • ¼ teaspoon of vanilla extract 
  • ¼ teaspoon of finely ground coffee

Tip 1: You can use decaf coffee beans instead of normal coffee beans. So, this homemade coffee ice cream can be enjoyed by everyone including pregnant women, small children, and the elderly.

Step 2: Steep/soak the milk with the sugar, coffee beans, salt, and cream

After gathering all your ingredients, the next step is to prepare our mixture. Mix together:

  • Milk
  • sugar
  • Coffee beans
  • Salt
  • ½ Cup of the cream

Next, heat the mixture in a medium-sized pan until it is warm and steamy. Then, remove the pan from the heat and let the mixture rest on the counter for an hour.

Tip 2: Always watch your mixture while it’s being heated to make sure it doesn’t boil. If you let it heat up until it boils, the milk will start to separate. In this case, you will have to start over again.

Step 3: Put the leftover cream over an ice bath 

While the mixture is cooling down, you can get started on the next step. In a medium-sized metal blow, pour the remaining 1 cup of cream in. Then, set the metal bowl over a larger bowl that is filled with ice. Next, set a mesh strainer on top and set it aside. 

Tip 3: Pour the cream into a metal bowl only since no other type of bowl can absorb the coldness from the ice. 

Step 4: Temper your egg yolks 

By the time you get to this step, the milk mixture probably has cooled down to room temperature. What you have to do now is reheat it, on medium heat, until warm and steamy again. And in a bowl, whisk the egg yolks together.

Next, slowly pour the warm milk and coffee mixture into the bowl with the egg yolks while whisking. This will make the egg yolks get tempered by the milk. After that, pour the mixture back into the pan. 

Tip 4: While pouring the warm milk into the egg yolks, make sure to constantly whisk the mixture so that the eggs will not get cooked by it. We definitely don’t want any cooked egg bits in our finished ice cream.

Step 5: Heat the mixture until it thickens 

At this step, the mixture has now become a custard. Stir the custard and mix constantly over medium heat with a spatula or wooden spoon until it thickens up. To know if the custard is thick enough, coat the spatula or wooden spoon and run your finger across the coating. If the custard isn’t running, then the mixture is done. 

Tip 5: Make sure to scrape the bottom of the pan while you stir. This is to make sure that no coffee beans settle on the bottom and possibly burn. If the coffee beans burn, it will give your ice cream a burnt flavor and, of course, isn’t something we want. 

Step 6: Pour the custard through the strainer and stir into the cream 

With the custard, next, pour it through the strainer into the bowl with the cream that was set atop the ice bath in step 3. Then throw away the whole coffee beans and mix in the vanilla and finely ground coffee, and stir until the mixture cools down.

Tip 6: Press hard on the coffee beans in the strainer to get as much of the coffee flavor as possible before discarding the beans.

Step 7: Chill and process in an ice cream maker 

For the last step, all you have to do now is chill the mixture in the refrigerator and then process it with an ice cream maker to finally get homemade coffee ice cream. 

However, if you don’t have an ice cream maker, you can still enjoy some fresh homemade coffee ice cream by following a few more steps below. 

Additional step 8: Freeze and stir method 

For those who don’t own an ice cream maker, you will need a bit more time and a deep stainless steel baking dish or pan. 

First, pour the finished mixture into the baking dish and freeze it for around 45 minutes, As it starts to freeze at the edges, remove the dish from the freezer and stir it forcefully with a spatula or wooden spoon then place it back into the freezer. Continue this freeze and stir method every 30 minutes until the mixture is frozen or has an ice cream consistency. 

Tip 7: Use a handheld mixer or blender to help with the stirring since stirring cold things require a bit of strength.
